Happy love month everyone!

I had some fun with these muffins of the month! I got these cute little heart-shaped silicone baking cups from my aunt as part of a Christmas gift- she knows me well! So I decided to do something really Valentine’s Day-ish and put a spoonful of Raspberry white chocolate muffin batter into each one. They turned out delish… and cute too!

½ cup butter, softened
½ cup sugar
1egg
½ cup milk
1 ¼ cups flour
2 teaspoons baking powder
1 cup white chocolate chips
1 cup fresh or frozen raspberries
Preheat oven to 375 degrees F. Whisk together flour and baking powder in a medium sized bowl and set aside. Cream softened butter with electric mixer. Add sugar and beat until fluffy. Add eggs and milk, beating just until combined. Fold flour mixture into wet ingredients with spatula. Add white chocolate chips and raspberries.


Fill muffin cups about 2/3 full and bake for 20-22 min.








Psst! Just a word of advice…
In this recipe, the raspberries can be substituted with any other berry or
multiple berries measured out to equal one cup.
Ex: 1/3 cup blueberries, 1/3 cup raspberries, 1/3 cup strawberries.

These look so delicious! I think I may make these for the Easter Brunch/First Birthday party I’m planning for my baby boy in March. I love that they look so easy, so my girls (3 year old twins!) can help. They LOVE baking with me! xoxo
