I know this is a baking blog, but I just had to share with you the simplist cookie recipe I know, because I understand there are those who just simply don’t have the time at this season to bake Christmas cookies.
This recipe has… are you ready for this? Four ingredients. That’s right- FOUR! Now I think ANYONE, even the water-burners out there, can handle this;)

20 Ritz crackers
8 oz. semisweet chocolate chips, melted
Crushed peppermint
¼ teaspoon mint or peppermint extract
Melt chocolate and mix in mint extract. Dip crackers in chocolate mixture, coating evenly on both sides of cracker.

Place crackers on baking sheet or plate covered with waxed paper. Sprinkle chocolate-coated crackers with crushed peppermint while chocolate is still wet.

Refrigerate 30 min. or until chocolate is firm.



Psst! Just a word of advice…
Every 8 oz. of chocolate will go as far as about 20 crackers.
Add more chocolate for more crackers.
