This buttery cookie filled with jam was always something I looked forward to around the holidays. There’s just something about the perfect compliment of jam and cookie that always had me craving more. Trust me, when people taste these, they won’t be able to get enough!
These little cookies are gems – easy to make and great flavor with very little guilt. Using coconut oil instead of vegetable or canola oil helps with the fat content of the recipe while still keeping the moist, crumbly texture of the cookies. The hint of almond is not too over-powering, just right. Plus, they’re quite easy to throw together, mix the dough and use your favorite jam! Your friends and family will love these little bites. Thumbprint Cookies
A recipe by Erin
What you need:
6 tbsps butter, softened
1/2 cup sugar
1 egg
2 tbsps coconut oil
1 tsp vanilla extract
1/4 tsp almond extract
1 1/2 cups all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
1/4 tsp salt
7 1/2 tsp jam (I used strawberry balsamic)
What to do:
- Preheat oven to 350 degrees.
- In a mixing bowl, cream butter and sugar. Beat in egg. Beat in coconut oil, vanilla and almond extract.
- In a medium bowl, combine flour, cornstarch, baking powder and salt; stir into creamed mixture.
- Roll dough into 1-inch balls; place on greased cookie sheets. Using the back of a tablespoon, make an indentation in the center of each ball.
- Bake for 8-10 minutes or until the edges are lightly browned. After removing from the oven, gently use the back of the tablespoon to make the indentation deeper in each cookie. Remove to wire racks. Fill each cookie with 1/4 teaspoon of jam. Let cool and enjoy!
